How to Prepare Asparagus

When buying asparagus, Size isn’t an indicator of quality or flavor. Thick asparagus is just more mature than the thin variety. You should look for bright green or violet-tinged spears with firm (not limp) stems. Make sure the tips are closed and compact. When the bunch is squeezed, it should squeak. Avoid stalks that appear woody.

You may also want to peel the thicker stalks and eat the tender insides. The tougher parts of the stalk can either be added to your food processor. Or you can blend it when you are making soups. Don’t throw away the tough ends or any part that is tough to cut. This part of the asparagus is perfect for juicing! Use any of the tougher parts to make asparagus juice. Asparagus juice is not very delicious, so add in a few pieces of apple, carrot or orange to sweeten. You can also add some raw honey to your asparagus juice or mix it into a fruit smoothie or a green smoothie to get all of the wonderful asparagus health benefits.
