I often get the idea that the simplest recipes are the best so that this time I decided to prepare them on a salad I had enriched with avocado and sunflower and pumpkin seeds ​in order to get a full meal.

From asparagus, we use soft peaks.

INGREDIENTS:

4 handful of green salad (of your choice)
1 bunch of wild asparagus
2 young bow
1 avocado
1 bunch of radish
2 Tablespoons (TBSP) of pumpkin seeds
2 TBSP of sunflower seeds
1 TBSP of squeezed lemon juice (or lime)
2-3 TBSP of olive oil
Pinch of salt (sea or himalayas)

PREPARATION:

Wash all vegetables well.
Asparagus do not use whole but only peaks (remove the stems). Slice it on a small.
Cut the salad into smaller pieces, cut onions and radish on the rings, and peel the avocado and cut into cubes.
Mix all in the large bowl, add sunflower and pumpkin seeds, and season with lemon juice, olive oil and salt.
Mix well and serve.

TIP: I suggest that you moisten pumpkin and sunflower seeds in salt water overnight, after which you need to rinse and filter them. If you want crunchy, after soaking put them in the dehydrator for about 10 hours.
